Our livestock management is built on the belief that a high quality end product starts with a low stress life. We specialize in premium Angus cattle, chosen for their natural ability to produce superior marbling and their calm temperament. By managing our herd across our local properties at Currency Creek and Hindmarsh Island, we maintain total oversight of animal health and nutrition from birth through to harvest.
We use low stress handling techniques. This is critical for quality control, as minimizing stress ensures optimal pH levels in the meat, which directly impacts color and tenderness. Our cattle graze on nutrient dense pastures before moving into our finishing program. By finishing our herd on high energy lucerne for 90 to 120 days, we develop the sweet flavor and consistent intramuscular fat that defines Merilli Angus. This dedicated focus on animal welfare across our local farms results in a product that is cleaner, healthier, and more flavorful.
The quality of Merilli Angus is defined by the science of taste and the patience of traditional methods. We stand apart by focusing on the golden window of production. We harvest our cattle at a precise live weight of 500kg. This yearling stage ensures peak tenderness and fine muscle fibers before they naturally toughen with age. While industrial beef focuses on maximum weight, we focus on the ultimate eating experience.
To elevate the flavor, our beef is finished on high protein lucerne for 90 to 120 days. This creates the rich, sweet profile and consistent intramuscular marbling our customers expect. Every side is then traditionally dry hung for 21 days. This allows natural enzymes to tenderize the meat while excess moisture evaporates. The result is a zero shrink product that sears perfectly in the pan without the water loss common in supermarket meat. You are paying for concentrated flavor and premium local quality in every cut.
We offer Merilli Angus beef on a carcass weight basis to provide the best value for families looking to fill their freezers with premium quality. Whether you choose a quarter, half, or whole side, your order represents a true paddock to plate investment. By buying in bulk, you bypass the retail markup of boutique butcher shops while securing a much higher grade of beef than available at standard supermarkets.
Each side is boutique butchered, vacuum sealed, and clearly labeled for your convenience. Our pricing is all inclusive, covering the 21day dry aging process and professional artisan processing. Because our beef is dry aged, you receive a product with minimal moisture content, meaning our steaks do not shrink when cooked. A quarter side typically fits into a standard 100 litre chest freezer, providing months of tender, lucerne finished meals. We take the guesswork out of bulk buying by providing a transparent, high quality product delivered direct to your door
Merilli Angus operates across Currency Creek and Hindmarsh Island, regions known for strong pasture growth clean coastal air and a reliable natural feedbase. Our properties combine lucerne paddocks perennial grasses and clover based pastures that support slow even growth and premium grass fed beef. Coastal conditions moderate temperatures reduce heat stress and allow steady year round development.
Our farming system is built on rotational grazing soil stewardship and long term resilience. Grazing rotations are planned to protect plant density encourage regrowth and prevent overuse. This improves root health water retention and biodiversity while ensuring cattle have access to nutrient dense forage without heavy synthetic inputs.
We continue to invest in pasture renovation fencing and water systems to support even grazing pressure calm stock movement and lower environmental impact. Our philosophy is simple. Every decision must support animal welfare soil health and beef quality.
The Merilli property carries a long agricultural heritage as part of the early coastal farming developed by pioneering families across the Fleurieu Peninsula. The name Merilli is preserved as a connection to that history, reflecting stewardship, continuity, and respect for the land. We have invested heavily in improving pastures, fencing, water infrastructure, and cattle genetics across our Currency Creek and Hindmarsh Island holdings.
These improvements allow us to operate a system supporting both stud level breeding and premium beef production. What began as a small herd for our own household has grown organically into a recognized Angus operation supplying families across South Australia. Today, our history of land improvement and genetic selection allows us to maintain the strict 500kg harvest and 21 day dry aging standards that define our brand. We remain committed to the pioneering spirit of the region, delivering quality that honors our heritage and your table.
Animal welfare and land stewardship are central to our operations. We use low stress handling to ensure cattle remain calm, confident, and accustomed to quiet interaction. This approach directly supports healthy growth and superior eating quality. Our regenerative strategy focuses on building a self-sustaining ecosystem across our properties. We actively support dung beetle populations and use biochar to improve soil structure and moisture retention, ensuring our pastures remain productive even in dry seasons.
To further stimulate microbial life and pasture resilience, we apply custom compost teas. Our breeding program focuses on soundness, temperament, and maternal ability. Cattle are selected for structural correctness and a quiet nature, ensuring they thrive under pasture-based conditions. This careful balance of soil health, animal welfare, and elite genetics allows us to produce consistent, high-quality beef that is better for the land and the consumer.
